I have struggled with Indian food. We are huge fans of a local Indian food buffet, and no matter what I do, I can't come close. But I have made something that I like finally. The secret ingredient that I was always missing was something I love the flavor of, but no recipe I own mentions. It's tomato onion masala or in some places I've seen it just called tomato onion gravy. It's assumed you already know about it in most recipes, so they don't even mention it.
My modified instant pot Aloo Gohbi Masala recipe (work in progress) --
Saute onion in oil until translucent.
Add 16 oz can of Wegmans fire roasted tomatoes.
Add one teaspoon each of coriander powder, cumin powder, turmeric, salt (you'll likely need more salt but you can add later to taste).
Add one tablespoon of curry powder, sugar, and garlic/ginger paste.
Stir together, then turn off heat.
Add one head of cauliflower cut up into 1 inch pieces.
Add 1/4 cup of olive oil or choice of oil. Add 1/8 cup of water
Stir together well, making sure nothing is stuck to the bottom of the pan. Pressure cook for 4 minutes.
Open and taste. Add additional salt, curry powder, and pepper if needed.
Add 16 oz can or about 2 large boiled potatoes, and 1/2 cup of frozen peas.
Pressure cook for 0-2 additional minutes.
