Instant Pot Recipies

These are some really great recipes that I've found for the Instant Pot so far. We make other things, but these are the exceptional standout recipes that are super easy and good.

  • Frozen tamales from Trader Joes - put on trivet over 1-2 cups of water. High pressure 20 minutes.
  • Corned Beef and Cabbage - corned beef w/ season packet & four cloves of garlic in 6 cups of water, high pressure 55 minutes. Empty the Instant Pot. Put back in 2 cups of the liquid, with a trivet, add potatoes, carrots, and cabbage chunks. Cook 5 more minutes. Full recipe here.
  • Spicy Vindaloo Chicken - Add chicken thighs to trivet, cover with Maya Kaimel's Spicy Vindaloo sauce. High pressure 8 minutes with natural release of pressure.
  • Cuban Black Beans - 1 bag of dried black beans in 4 cups water. High pressure 35 minutes. Add these to the pot and saute for 20 minutes. Recipe here.
  • ½ cup of olive oil
  • 1 white onion chopped
  • 4 garlic cloves minced
  • 1 green bell pepper chopped (I use roasted red peppers, pimentos)
  • ½ teaspoon of oregano
  • ¼ - ½ teaspoon of cumin
  • 4 teaspoons of salt
  • ½ teaspoon of ground black pepper
  • 2 tablespoons of white wine
  • 2 tablespoons of rice wine vinegar

Screenshots from our trip photobook

Took the kids to Disney to celebrate my birthday. The highlight of our trip was visiting an empty Epcot at one of their extended evening events. We stayed at two resorts - Port Orleans French Quarter, and Animal Kingdom Lodge and both were really nice.

First Week of College

She went in to all her classes. Took the bus there and back again. Her first assignment for English is to critique a film, so she and I are watching movies together to prepare. For her graphic art course, she showed them all her ocean drawing, and the professor awed and commented over her great potential. No photo description available.

Rusty Trips: Legoland NY Scouting Trip

I recently discovered much to my surprise that the Gold Passes I purchased two years ago were still valid so we thought we would take the kid on a spur of the moment trip for her birthday. We drove all the way there to camp overnight, and on the way she expressed that she wasn't feeling well.

So, we thought we'd cancel, but having driven there, and since our passes worked, two of us took a quick scouting trip through the place.

Turns out, it's hot there. There are no trees or any shade to speak of. The only hats they sell are trucker hats. They have various water fountains but we didn't bring water bottles. They sell soda and the sugariest lemonade we've ever tasted which kind of left us even more thirsty but also full feeling, like too full to eat. But it was a Tuesday so there weren't many people.

So we rode their two best rides, each with about a 10 minute wait. It's a cute place, like a mall size amusement park. Probably not worth a 3 hour drive, but we'll probably go back since she missed out on her birthday visit.

camped at: Winding Hills Park - 1847 Route 17K, Montgomery, NY 12549 -

nice quiet* campground with newer nice hot showers, $45, reservations not required (we went on a Monday, 5 campsites were taken). *There is an airport close by so airplanes do fly overhead during the night.
